Recipe: Healthy baked fish dish

This is actually a slimming world recipe, which I have fallen in love with. Serve with vegetables and your choice of potatoes!

4 x fresh fish fillets (sea bass, cod or salmon)
Few tablespoons balsamic vinegar
400g cherry tomatoes, halved
2 cloves garlic
8 rashers bacon, chopped

Preheat oven to 200 degrees / gas mark 6.
Line a roasting dish with baking paper.
Place fish fillets in the lined dish.
Add cherry tomatoes, bacon and garlic.
Drizzle with balsamic vinegar.
Cook for 20 mins (check fish is fully cooked).


Of course the kids ate the mash and veg with fish fingers, but one day they’ll appreciate these nut-safe meals too!
